When we think about lasagna, we usually think of a somewhat difficult dish with many steps. However, this keto lasagna in a bowl is made in no time and in one bowl.

Other than lasagna noodles, you can use various vegetables to make a lasagna. This lasagna uses ‘zoodles’ or zucchini noodles which makes it perfect for low carb and keto. These zucchini noodles are ideal if you’re looking to cut both calories and carbs as one small zucchini – which can be spiralized, grated or sliced – contains only 20 calories and 2.9 net carbs

Why is my zucchini lasagna watery?

Zucchini is a watery vegetable with up to 95% water. Therefore, if not done right, you can end up with a watery or soupy zucchini lasagna in the end. While this happens often, you can avoid it by following some simple steps outlined below.

How do you make zucchini lasagna not watery?

To make sure your one-bowl lasagna is not watery, these are the steps you should follow.  These 3 easy steps will ensure your pasta substitute has little to no excess moisture:

  1. Spiralize your zucchini or use a mandoline slicer to get the slices as thin as possible. The thinner the slices, the less moisture the zucchini will hold.
  2. Dehydrate your zucchini. Once you’ve spiralized or sliced your zucchini, the next step is to dehydrate it. Do this by placing the zucchini on a chopping board or plate and lightly sprinkle with salt. Let this sit for about 10 – 15 minutes. Beads of moisture will form on the spiralized or sliced zucchini. 
  3. Once the time is up, dab out the excess liquid with a paper towel.

Is ricotta cheese keto?

Ricotta cheese is an Italian whey cheese that is higher in carbs than most other cheeses. In every 100 grams of ricotta cheese, there are 3 grams of carbs. Therefore, you can have ricotta cheese on keto once you practice moderation. 

Tips to make easy lasagna in a bowl

Make sure you use a microwave-safe bowl if using a microwave or a heat-proof bowl if baking the lasagna in an oven. You can make one big bowl or divide it between two bowls for smaller portions. 

When cooking the ground meat, whether beef or sausage, make sure it is cooked through, and do not forget to drain any excess fat as the extra liquid may make your bowl of zucchini lasagna soggy. 

Ingredients to make low carb lasagna in a bowl

  • 1 cup zucchini noodles, you can spiralize or grate 
  • ½ cup tomato sauce, sugar-free or 1/2 cup sugar free marinara sauce
  • 1 cup cooked sausage or cooked ground beef.
  • ½ cup ricotta cheese or ricotta cheese substitutes
  • ½ tsp garlic powder
  • ½ tsp Italian herb seasoning
  • ¼ cup mozzarella cheese, shredded or torn into pieces

How to make keto lasagna in a bowl

To start, gather all the ingredients in one place.

Then in a bowl, combine the ricotta cheese with garlic powder and Italian herb seasoning. 

Place 1/3 of the sausage in a bowl. Top with 1/3 of the tomato sauce

Next top with 1/3 of zucchini noodles.

Then 1/3 of the cheese mixture.

Repeat this process twice more.

Finish with mozzarella as the last layer, then microwave the keto lasagna bowl for 2 minutes or bake for 10 minutes at 350F.

Serve this easy single-serve keto lasagna warm.

Recipe substitutes

I used cooked sausage, but you can go with ground beef or pork, or any protein source that you want. This recipe can also be great with cooked ground turkey.

If using unseasoned meat, like ground beef, make sure to season it with salt, black pepper, and your desired herbs.

The sausages are the easiest to use, as they already have spices in them, so you do not have to worry adding in extra seasonings. 

How to store leftover lasagna in a bowl

You can store your single-serve lasagna in a fridge, covered with plastic foil, or in an airtight container, for 2 days.

Also, this keto lasagna in a bowl recipe is freezable – to freeze, separate the lasagna into two portions, and divide it between freezer-friendly containers. Store in a freezer for up to a month.

To serve; thaw overnight and reheat in the oven for 2 minutes.
